The Meat

This amazing fish is perfect for searing and marveling at the ocean, which is boasting plenty of these fine fish. Bluefin tuna is not like albacore tuna, it's more like a beef steak. Try searing it and see all of that beautiful fat emerge - it's a thing of wonder. Pan seared or sashimi is our vote.

Prep

Tuna will always arrive as a chunk of loin. Skin off, bloodline out (unless otherwise indicated).  Often the fatty belly meat “otoro” is available as an add-on.

Gear and fishery info

All our bluefin tuna are caught by rod and reel. Bluefin tuna populations are doing well, and these guys reeling them in with no bycatch is exactly what we want to support.

Health concerns

It's no secret that tuna, being a large predatory fish that subsists almost entirely on other fish species (and cephalopods) pick up mercury.

Parting Shots

Nothing fights like a tuna. There are a number of party boats in The Bay Area that will go for them when they get within 50 miles of shore. This usually happens in July, August and September. Be advised: it's a long, long ride out to the tuna grounds... and it ain't cheap! Nevertheless, it will be an incredible and memorable experience, even if you skunk.
