Halibut cheeks!

Easy breezy lemon squeezy! What to do with this Alaskan delicacy? Try Ang Wisco’s simple method!

  1. Chunk into roughly equal sizes, salt lightly, let sit for 15-30mins

  2. Brown 1-2 tbsp butter in pan at low to medium heat

  3. Add fish to pan, let sit and don’t move around for 3-5 mins

  4. Add a little butter if pan is getting dry and burning the crumbs

  5. Flip fish, again don’t move around for 3-5 mins

  6. Squeeze a slice of Meyer lemon into pan, let sizzle for 30s or so then put fish on plates!

  7. Squeeze a little more lemon juice into pan and scrape the brown crumbs off bottom of pan

  8. Drizzle the lemon butter and crumbs from pan over the fish

  9. Squeeze fresh slice of Meyer lemon right before eating! Bon appetit.
