  • Wasabi cream: premade wasabi + heavy cream whipped + salt

  • Dab of soy, furikake, sansyo

  • Taku’s sushi rice: 200ml brown & rice vinegar, 75g sugar, 4g salt, strip of kombu

  • Press sushi into a rectangle shape & freeze. Cut & fry both sides in oil until golden (but inside is still fluffy.)
