Sautéed Sand Dabs with Bread Crumb Batter

Sand dabs: the real San Francisco treat! Kick it old school with this classic dish for an iconic fish...

Ingredients:

  • 4 sand dabs, trimmed

  • 1 egg

  • ¼ cup milk

  • ½ cup bread crumbs

  • 1-2 tablespoons butter

  • lemon wedges

  • salt & pepper

  • capers (optional)

Method:

  1. set up 2 shallow bowls – one with mix egg and milk, another with bread crumbs

  2. dredge each fish in egg mixture, then roll in bread crumbs until thoroughly coated

  3. heat the butter in a large skillet

  4. sauté the fish until done

  5. transfer fish to heated plates, add capers to the remaining butter from the pan and pour over the fish, squeeze with lemon

  6. the best way to eat them is to nudge your fork into the backbone and push the meat out from there. Easy yummy buttery goodness!
