Miso-marinated Sablefish (Black Cod)

This popular take on black cod yields delicious results and is easy to do in your broiler. The longer you marinate it the richer it will be, but a quick 30 minutes will do the trick too.

Ingredients

  • 1/4 cup red or white miso paste

  • 1/4 cup sake

  • 2 tablespoons mirin (or you can substitute sherry or sweet white wine)

  • 2 teaspoons soy sauce

  • 1 tablespoon vegetable oil

  • 1/4 cup sugar

  • 2 black cod filets

Method

  1. Whisk together miso, sake, mirin, soy sauce, oil, and sugar.

  2. Rub mixture all over your filets, then seal in an airtight container. Marinate for 30 minutes or up to two days.

  3. Fire up your broiler and let it get nice and hot. Adjust the broiler rack to 4 inches from heat.

  4. Line your baking pan with foil, and place your black cod filets skin side-down on pan.

  5. Broil about 10 minutes or until top surface is well charred and a toothpick or knife gets no resistance when pierced. If the fish starts to burn cover with bits of tinfoil.
