Simple Salmon Chowder

Yield: 2 (allow ¼ # salmon per person for a main course)
Ingredients
1-2 Tbsp butter
½ - 1 C diced onions/sliced scallions
1-2 garlic cloves
1 small chile
1 C broth*
1 medium potato, diced
Salt and pepper to taste
½ # salmon, diced
Directions
Melt butter in a stockpot or pan
Sauté onions, garlic, pepper until soft
Add potatoes, salt, pepper, and broth and bring to a strong simmer
Add the salmon and simmer until cooked
Serve and enjoy
* seafood broth would be ideal, but vegetable or chicken broth would work
NOTES:
Optional vegetable additions include: celery, scallions, corn, bell pepper, carrots, peas
For a creamy chowder, add some whole milk or cream with the salmon
If you have more people, you can extend the recipe with extra potatoes and/or vegetables.
