Simple Salmon Chowder

Easy does it! Sea Forager Member Carol A. Hoover says: “This is a simple recipe based on what I had available.”

Yield: 2 (allow ¼ # salmon per person for a main course)

Ingredients

  • 1-2 Tbsp butter

  • ½ - 1 C diced onions/sliced scallions

  • 1-2 garlic cloves

  • 1 small chile

  • 1 C broth*

  • 1 medium potato, diced

  • Salt and pepper to taste

  • ½ # salmon, diced


Directions

  • Melt butter in a stockpot or pan

  • Sauté onions, garlic, pepper until soft

  • Add potatoes, salt, pepper, and broth and bring to a strong simmer

  • Add the salmon and simmer until cooked

  • Serve and enjoy

* seafood broth would be ideal, but vegetable or chicken broth would work


NOTES:

  • Optional vegetable additions include: celery, scallions, corn, bell pepper, carrots, peas

  • For a creamy chowder, add some whole milk or cream with the salmon

  • If you have more people, you can extend the recipe with extra potatoes and/or vegetables.
