Fresh firm fish - this is albacore and you can use halibut or shrimp. This is a bigger cubing, you can go smaller.
Marinate in citrus (lime & yuzu) & salt always, 20-30m,
Add a mix of colorful textures & flavor: red onion, green onion, fresno/red peppers, mango, avocado, cilantro. Taste and add a squirt more lime, salt & pepper to finish.
Serve w/ tortilla chips.
