Cioppino with spot prawns & halibut cheeks!
Cioppino! Sea Forager Superstar Ang Wisco shares her recipe for the miracle seafood dish we all love, now with exceptional Ingredients: (serves 10)
1/2lb each: Halibut cheeks, spot prawns, & mussels
Olive oil
Sesame oil
Butter
Onions (white or yellow)
Garlic
Tomatoes
Red pepper
Yellow pepper
Cherry bomb pepper (a little spicy)
Celery
Carrot
Potatoes (fingerling)
Thyme
Oregano
White wine
Water
Salt
Meyer lemon
Yuzu if you have it
Method:
Stir fry onions until brown in sesame oil (or neutral oil)
Add chopped garlic, fry garlic until light brown
Add red and yellow peppers and 1-2 tbsp olive oil, stir together so garlic doesn’t burn, fry for a couple mins
Add tomatoes, celery, carrots, fingerling potatoes
Add thyme and oregano
Add white wine
Add 1-2 tbsp butter
Add Cherry bomb pepper (a little spicy), chopped fine
Add lemon juice (maybe 1/4 lemon)
Got yuzu? Add yuzu juice! About half of a yuzu, no seeds
Add water to desired level of soupiness
Simmer all the non fishy stuff for at least 30 min. The longer the better, a couple hours if you can.
While it’s simmering, in this order, put in halibut cheeks, after 3-4 min put in spot prawns, after 2 min put in mussels and let it simmer for another 4 min. (Total simmer times: halibut 8-10 mins, prawns 5-6 mins, mussels 3-4 mins)
Serve right away! (Or else the mussels and prawns will continue to cook and get less tender)
