Pan fried True Cod with breadcrumbs and herbs

Ingredients

  • 1 lb True Cod

  • 3 tablespoons extra virgin olive oil

  • Salt & pepper, to taste

  • 1.5 teaspoon of chopped fresh herbs (I used rosemary and thyme)

  • 1 minced garlic clove

  • 1/2 teaspoon salt or garlic salt

  • 2 slices fresh bread

  • 1 egg, scrambled in a bowl

  • Lemon wedges for serving

Method

  1. Pour yourself something to drink and put on some good tunes.

  2. Rinse and pat your fish dry with a paper towel. Salt and pepper your fillets.

  3. In a food processor, buzz the bread, herbs and garlic salt (or fresh garlic and regular salt)

  4. Scramble one egg in a bowl add a little salt, put the breadcrumbs in another bowl

  5. Heat your pan on medium-high, add 3 tablespoons olive oil

  6. When the pan is really hot, dredge your fillet through the egg, then the breadcrumbs (coat fully), and place in the hot pan.

  7. Cook about 3 minutes on each side until they're golden, depending on thickness you may need to cook longer.

  8. Kiss the chef, and serve!
